It can definitely work, although usually managers, and sometimes waiters, are a better bet than doormen. For managers I would recommend something a little less "crass" than just slipping them money. In both cases, it will only be helpful with certain people, and it can take time to figure out who they are. Besides just tipping you off on recommended chicas, these guys can also talk you up to a girl, which can help out a lot.
