OK, both my reccomendations are not walking distance but a) California Restaurant in Plaza Rio & b) Hotel Camino Real serve fine breakfast buffets. Both have omelette bars with CA also doing waffles and pancakes to order. CR has about 7-8 fresh juices while CA has 2. CA serves more mexican fare as it's alternates with a few carne dishes and a chicken dish. They always have bacon & lots of breads & pastries. CR serves more traditional breakfast fare with bacon, sausage, hashbrowns, cakes, and other changing alternates. CA runs about $9 where CR runs about $12.

Also, La Fogata (by Rio) and the Pueblo Amigo Hotel serve pretty decent breakfasts with the PA having an outstanding Sunday buffet.
