I can not imagine they can just pull people over for looking latino. If you look like a normal guy-girl couple, I cannot imagine they will bother you. You can't tell me everytime a white guy and a latina girl drive past that checkpoint, they have to verify her status with the INS. If she looks like an otherwise normal American young woman, you will not have any problem. The key is to look normal and relaxed. INHO, they are looking for smugglers, not the occasional illegal who may be going by. The worst thing you could do is try and conceal her.
