The rule of thumb is that if you could follow the sentence with "now" in English, then you would use "estar", which indicates a tenuous and changeable state of being..."You are flaca, NOW!", would indicate the use of "estar" rather than "ser" ...
But a chica who had a history of "gordita-tude" might be a "ser" situation...the "once and future" gordita, who "always and forever", "has been" and "will be"...might take on "ser" as an indication of her permanent state of inflatability.
