I haven't eaten at Sanborn's, but I've been in the one across from Palacio de Jai Lai frequently...nd to me the whole thing is like the Macy's of Mexico. Considering it's history ( at least back to 1911) as a department store and it's reputation as a puerveyor of goods to the upper-class, this may explain why it holds sway over the Mexican mind. I know there are New Yorkers who still think "doing lunch" at Macy's is a big deal. From what I gather, the whole "department store" concept is a dying retail model...but the power of Sanborn's as an economic and social institution seems to continue in Mexico.
