You are right that every south american country is different. In chile, argentina, and uruguay castillano is very common. I've also noticed that it is fairly common in colombia, peru, and ecuador. I think in the latter countries it is mostly spoken by "criollos" who consider themselves in a higher class than the general population, but that is from my own observation so I am not 100% certain. Most of the differences with castillano are the usage of os, sos, vos for the familiar form. Some present tense conjugations are different, for example, the familiar form of tener is tenes. The pronunciation difference seems to me the most pronounced in argentina, but of course it varies not only by region, but also often varies within a given region... Everyone that I have heard who spoke castillano had somewhat of what I would describe as a "argentinian like" accent, which is the ll and y pronounced like the english j.
