What prices could I expect a Help girl would ask for around New Year's Eve? How about the thermas?

Termas prices don't change for NYE or Carnaval.
Help prices depend on your looks, portuguese and willingness to pay, more than time of year. In 2002 I did a top end Help girl three nights, twice for free and once for R50. An older American (50's) I know was paying her R400 a night although he generally is a good payer. This is an extreme example but shows there are no hard and fast rules for what is paid.
As a range I would suggest R100-300 although I've only ever gone above R150 twice. Prices are going up (and a R30 entrance fee doesn't help) so this is getting more difficult. I would say R200 a night is fair.
Personally I prefer morenas. If you want a mulatta I would go to Balcony over Help.

I just have this Help girl coming over regularly. I met her before she started at Help, when she worked at a cheap termas. She tells me that she and her friend slap anyone in the face who offers R$ 100, refuse 200 and go for 300.
She and her friends prefer to go home without cash then going for under R$ 200.
Of course, the gorgeous Italian hunk who she would have loved to fuck for free, when he offered 100, she immediately accepted. And guys she considers disgusting, she charges 500.
I suspect that she will increase prices for the hollidays.
