Well that sucked - went to hit submit and page timed out/lost the chapter. I'm going to be a bit more succinct this time around :-)

Plenty of non-Filipino ethnic food choices.

Mexican (i.e. tex-mex). three main choices:

Tequila Reef (near PB), Iguanas (formerly Zapatas (Perimeter), and Taqueria Real (Fields). Of the three, I have to recommend grudgingly Tequila Reef. You get a huge portion, served hot per your order at a reasonable price. Decent chips and salsa.

Iguanas is the same quality as TR, same price, but 1/2 the portion size. It does have nice ambiance for a tex-mex place and plenty of local families as guests vs drunk punters.

Taqueria Real = lots of fans and buzz about this place and hits the spot if you have the munchies while in a drunken stupor. Does little else for me. Ask for extra sauce/salsa of your liking as I find the food very bland.

Japanese - Niji in Perimeter is the choice and a very good one at that. Little bit of $$$ here, but up to western standards in terms of decors, service, and food quality.

Korean - on Fields, Oppa is a fine and busy restaurant. very popular with the ladies as well. There are a plethora of Korean restaurants of course in perimeter and elsewhere for you to explore if you love Korean food.

Chinese food. If you like American style Chinese food (not Chinese food) you will do ok at Fortune Restaurant. There are two on Macarthur hwy heading toward Casino Filipino and a smaller version in SM mall. Having lived in China for a while, I like my Chinese food to be authentic and a particular way. When I order Chinese here, I go to Suzhou Dimsum a very small and unassuming place on Macarthur hwy by the rotary (coming from Fields cross Macarthur and walk left for about 3 minutes. They have very good dumplings, xiao long bao zi, and noodle soups at a very reasonable price point.

Vietnamese - several places have popped up. Viet garden (by Chow King/Jolibbe as you exit walking street in the strip mall) is a decent choice for Pho. On Fields, there is also Banh Mi Ngon Vietnamese Sandwich Shop, which has better fresh spring rolls than Viet Garden and depending on your tastes may have better pho. I do recommend asking for vegetable pho vs there beef version regardless of your dietary preferences. Neither come close to pho in Vietnamese let alone Chinatown in the USA, but if warm light soup hits the pot and you want to take a break from the grease and fat of Fields, this is an excellent choice.

Indian - by far the best choice is Rasoi in Hensonville, which has been around for quite a while. Very reasonably price and very good curries and soups (meat and vegetarian). The only downside is the naan as they won't invest in a tandoor oven.

There is also a new place in between Philies and Orchid Inn. i tried the daal tadka here just to check out the venue, but it's at least double the price of Rasoi and food isn't as good. Very few customers here - wouldn't expect it to be there long term.

Arabic - Red Sea on Fields. I recommend the hummus, tabbouleh, and Arabic bread. I however do not recommend the rest of the menu. YMMV depending on your preferences of course. They have hookah here as well for those that indulge.

Thai - several places are of here and if you like thai food in the USA, you will likely think this is ok too. Personally, i would rather wait to go to Bangkok and get proper thai food. My pick of the litter is Patcharawan's Thai on Malabanias Road (towards where Narcisco road loops in). Not bad by any means and decent selection of both meat based and vegetarian options.
