I think it's just because they've been in the business longer. The more time goes by, the more risks these workers take, and the greater likelihood they will contract something. I am amazed by the chicas that tell me they've been working X number of months and so far haven't caught anything. Of course I wonder if they're telling the truth, but they sure seem to be.
