I go along with the idea of making sure the meat is freshly cooked in front of you. The only time I have ever got sick in TJ was when I ate off of a fried chicken cart. I don't think it was the freshly cooked chicken, but the lettice served on the side. That lettice was no doubt washed in bad water. Let's face it, they are not going to wash anything from those carts in bottled water. So the advice is, always eat only cooked food and you should be OK.
