I take the 5 through downtown to the 710 (Long Beach freeway) to the 405. The 710 bypasses the worst part of the 405 through Santa Monica and UCLA (always avoid as much of the 405 as you can at any time of the day or night), but you can still get hung up anywhere on the 405, even in Orange County. And sometimes the 710 is bad too, with tons of truck traffic to/from Long Beach. Using the 15 is an option, but you have to drive a ways to get to it. I usually take the toll road to San Juan Capistrano unless it's already well past the evening rush hour. Between CalTrans construction, accidents, daytime volume, and rush hour, it's too easy to get snared in the Irvine/John Wayne airport area, and for $2.25, it's worth it IMO.

Bottom line is that the freeways suck and you just have to expect that sometimes you'll sail through and other times you'll get hung up.
